Ingredients
  

  • 3 cups green cabbage finely shredded
  • 1 cup red cabbage finely shredded
  • 1 large apple Granny Smith or Honeycrisp, julienned
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds optional
  • Dressing:
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine green and red cabbage, apple, dried cranberries, and sliced almonds (if using).
  • In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  • Pour the dressing over the slaw and toss until evenly coated.
  • Refrigerate for 20-30 minutes before serving to allow flavors to meld.
