Cranberry Chia Pudding
A creamy and nutritious pudding made with tart cranberry puree, chia seeds, and a touch of natural sweetness. This make-ahead breakfast or snack is packed with fiber and antioxidants.

Ingredients
- 1 cup fresh or frozen cranberries
- 1/4 cup water
- 3 tbsp maple syrup or to taste
- 1 cup unsweetened almond milk or preferred milk
- 1/2 cup chia seeds
- 1 tsp vanilla extract
Instructions
- In a small saucepan, combine cranberries, water, and 2 tbsp of maple syrup. Simmer over medium heat until cranberries burst and form a sauce, about 5 minutes. Cool slightly.
- Blend the cranberry sauce in a blender or food processor until smooth.
- In a mixing bowl, whisk together almond milk, cranberry puree, the remaining 1 tbsp of maple syrup, and vanilla extract.
- Gradually whisk in the chia seeds, ensuring they don’t clump.
- Divide the mixture into mason jars or small containers.
- Refrigerate for at least 4 hours, or overnight, to allow the chia seeds to absorb the liquid and thicken.
- Serve chilled, topped with fresh cranberries, orange zest, or granola if desired.
