Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cranberry Glaze:
  • 1/2 cup fresh or frozen cranberries
  • 1/3 cup orange juice
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1/2 tsp Dijon mustard
  • 1 clove garlic minced

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  • Sear chicken for 5-6 minutes per side until golden brown and fully cooked (internal temperature of 165°F/74°C). Remove from skillet and keep warm.
  • In a small saucepan, combine cranberries, orange juice, honey, balsamic vinegar, Dijon mustard, and minced garlic.
  • Simmer over medium heat for 8-10 minutes until cranberries burst and the sauce thickens slightly. Stir occasionally.
  • Pour the cranberry glaze over the chicken and serve warm.
