Ingredients
  

  • 1 pork tenderloin 1-1.5 lbs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • Cranberry Sauce:
  • 1 cup fresh or frozen cranberries
  • 1/4 cup orange juice
  • 1/4 cup water
  • 2 tbsp honey
  • 1/4 tsp cinnamon

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Season the pork tenderloin with salt, pepper, and smoked paprika.
  • Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until golden brown, about 2-3 minutes per side.
  • Transfer the skillet to the oven and roast for 18-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove and let rest for 5 minutes.
  • In a small saucepan, combine cranberries, orange juice, water, honey, and cinnamon.
  • Simmer over medium heat until cranberries burst and the sauce thickens, about 8-10 minutes. Stir occasionally.
  • Slice the pork tenderloin and serve with cranberry sauce drizzled on top.
