Ingredients
- 1 pork tenderloin 1-1.5 lbs
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- Cranberry Sauce:
- 1 cup fresh or frozen cranberries
- 1/4 cup orange juice
- 1/4 cup water
- 2 tbsp honey
- 1/4 tsp cinnamon
Instructions
- Preheat the oven to 375°F (190°C).
- Season the pork tenderloin with salt, pepper, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the tenderloin on all sides until golden brown, about 2-3 minutes per side.
- Transfer the skillet to the oven and roast for 18-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove and let rest for 5 minutes.
- In a small saucepan, combine cranberries, orange juice, water, honey, and cinnamon.
- Simmer over medium heat until cranberries burst and the sauce thickens, about 8-10 minutes. Stir occasionally.
- Slice the pork tenderloin and serve with cranberry sauce drizzled on top.
